The Lorax craze hit our house this week.
Inspired by IHOP's Truffula Chip Pancake, I set out to make my own Lorax-themed short stacks at home.
Although IHOP sells a whole wheat version, the sprinkles throughout the batter and on top seemed a bit too sweet. At first glance, I thought it was covered in pink frosting rather than yogurt! I convinced Kid Chef we could make something similar at home with less sugar.
Here's what we came up with. Introducing the Barbaloot pancake ...

To make Pipsqueak's silhouette, I used my favorite pancake recipe (Jiffy mix). I poured a circle of batter and gently pushed out two ears with a spoon. Then I drizzled some batter into the ears to fill in.
The topping is strawberry Activia yogurt. I first put half a container in a small Ziploc bag and placed it in the freezer for 15 minutes. Then I cut a tiny tip off the edge of the bag and piped it over the pancake. (The low temperature keeps the yogurt from running.)
And the final touch — sprinkles! These are Cake Mate Decors Snowflakes, which look awfully similar to Truffula treetops.
This is a breakfast you and your little ones can make together. Kid Chef especially enjoys applying sprinkles. I pour him a lid-full and he goes to town. No syrup necessary!
